Собственно стоило покопатся в sudoers как нашёл себе проблему....
Все команды которые требуют запуска с повышенными правами мне дают.

saymon is not in the sudoers file.  This incident will be reported.

В итоге вернул всё на место, как и было, но проблема осталась.
Сейчас в sudoers:

Собственно что не так я мог оставить, и в чём прокол?

Права какие на /etc/sudoers? Должны быть 0440, можно поменять с livecd.

Можно подробней пожалуйста?

sudo chown root /etc/sudoers
sudo: /etc/sudoers is mode 0551, should be 0440
sudo: no valid sudoers sources found, quitting

Хехе, точно! Открыл файлик простым редактором, geany и дописал
